  • 0.5 cups unsalted butter softened
  • 3 large eggs
  • 0.5 cups whole milk or almond/oat milk
  • 2 fresh lemons zest and juice
  • 1 tsp vanilla extract

Method

  4. Beat in eggs one at a time, then add lemon zest and vanilla.
  5. Gradually mix in dry ingredients alternately with milk until just combined.
  6. Pour batter into the prepared pan and bake for 25–30 minutes or until golden brown.
