Ingredients
  

  • 1 medium head green cabbage about 2 lbs, chopped
  • 2 cups classic Fritos corn chips
  • 1 lb lean ground beef or turkey
  • 1 medium yellow onion diced
  • 1 can (14.5 oz) diced tomatoes with herbs
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup shredded sharp cheddar cheese
  • ½ cup sour cream

Method
 

  1. Prepare your ingredients by chopping the cabbage and dicing the onion.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Add the diced onions and chopped cabbage; sauté for about 5-7 minutes until softened.
  4. Stir in the canned tomatoes, chili powder, cumin, and garlic powder. Simmer for about 10 minutes.
  5. Top with Fritos and shredded cheddar cheese; cover until the cheese melts (about 3-5 minutes).
  6. Serve warm with a dollop of sour cream on each plate.
