  • 1 1/3 cups all-purpose flour

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup brown sugar dark
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats about 100 grams, quick oats or large old-fashioned oats
  • 1/2 cup unsalted butter softened for cream filling
  • 4 ounces cream cheese brick style, full fat
  • 1 1/2 - 2 1/2 cups powdered sugar to desired consistency
  • 1 teaspoon vanilla extract for filling
  • 1/4 teaspoon salt for frosting
  • 1 tablespoon whipping cream if needed

Method
 

  1. Prepare your ingredients by gathering and measuring them accurately.
  2. In a medium bowl, whisk together all-purpose flour, ginger powder, cinnamon, nutmeg, ground cloves, baking soda, and salt until well combined.
  3. In a large mixing bowl, combine softened unsalted butter with brown sugar and granulated sugar; beat until light and fluffy.
  4. Mix in molasses and vanilla extract until fully incorporated; then add in one large egg and continue mixing until smooth.
  5. Gradually add dry mixture into wet ingredients while mixing on low speed; fold in rolled oats until evenly distributed throughout the dough.
  6. Scoop dough onto baking sheets lined with parchment paper; bake at preheated oven for about nine minutes until edges are lightly golden; let cool while preparing frosting by beating together softened butter and cream cheese before gradually adding powdered sugar until desired consistency is reached.
