Method

  2. In a medium bowl, whisk together all-purpose flour, baking powder, salt, granulated sugar, and spices until well blended.
  3. In a separate large bowl, combine unsweetened applesauce, milk, vegetable oil, molasses, and vanilla extract using a whisk until fully incorporated.
  4. Carefully stir the dry ingredient mixture into the wet ingredients until just combined; do not overmix.
  5. Pour the batter into an 8x11-inch baking dish and spread it evenly across the bottom. In another bowl, mix together brown sugar with regular granulated sugar and ground cinnamon before sprinkling this topping evenly over your batter.
  6. Pour apple cider and water over the sugar topping without stirring it in; bake for about 40 minutes or until the middle is set.
