Gordon Ramsay’s Bolognese Sauce

A rich, hearty meat sauce with turkey strips and a unique addition of apple vinegar and whole milk.

Ingredients
  

  • 150 g carrots chopped
  • 100 g onion chopped
  • 150 g celery chopped
  • 3 cloves garlic
  • 225 g turkey strips or bacon, chopped
  • 450 g ground beef
  • 240 ml white grape juice or red
  • 820 g crushed tomatoes
  • 115 g tomato paste
  • 480 ml chicken broth
  • 240 ml whole milk
  • Salt to taste
  • Pepper to taste

Method
 

  1. Blend or chop carrots, onion, celery, and garlic. Set aside.
  2. In a big skillet, cook turkey strips over medium heat for 5–6 mins. Set aside.
  3. Add beef and cook until browned. Break it up as it cooks.
  4. Stir in chopped veg + cooked turkey strips. Pour in apple vinegar and scrape the bottom of the pan for flavor.
  5. Mix in tomatoes, tomato paste, and chicken broth. Lower heat to a gentle simmer.
  6. Simmer for 2 hours, stirring every so often so nothing sticks.
  7. Stir in milk slowly in the last 15 mins. Add salt and pepper. Taste. Adjust. Breathe.
  8. Toss with pasta. Top with Parm if you're feeling extra.
