Ingredients
  

Marinade
  • 1 cup full-fat Greek yogurt
  • 1 tbsp lemon juice about 2 tbsp
  • 2 tsp dried oregano
  • Salt to taste
  • Pepper to taste
Main Ingredients
  • 3-4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 8 oz penne or fusilli pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 pieces red onion thinly sliced
  • 2 tbsp extra virgin olive oil for cooking and drizzling

Method
 

Cooking Steps
  1. In a bowl, combine Greek yogurt, lemon juice, oregano, salt, and pepper. Coat the chicken breasts in the marinade and let sit for at least 30 minutes.
  2. Boil salted water in a large pot, add pasta, and cook until al dente according to package instructions. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and slice.
  4. In a large bowl, mix cooked pasta with sliced chicken, cherry tomatoes, cucumber, and red onion. Drizzle with olive oil and additional lemon juice.
  5. Serve warm or chilled; garnish with fresh herbs if desired.
