Ingredients
  

  • 3-4 pcs boneless, skinless chicken breasts about 1.5 lbs
  • 2 medium red bell peppers chopped
  • 1 large red onion sliced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh oregano leaves
  • 1 pcs lemon zest and juice
  • 3 cloves garlic minced
  • ½ cup pitted Kalamata olives
  • Salt to taste
  • Pepper to taste
  • ½ cup crumbled feta cheese optional

Method
 

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Pat chicken dry and season both sides with salt, pepper, and dried oregano.
  3. Arrange chicken on the baking sheet with chopped bell peppers and onions.
  4. In a bowl, whisk together olive oil, lemon juice, garlic, fresh oregano, salt, and pepper; drizzle over the chicken and veggies.
  5. Scatter Kalamata olives around the pan.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. If using feta cheese, sprinkle it over the dish during the last five minutes of baking.
  8. Let rest for five minutes before serving.
