- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Pat chicken dry and season both sides with salt, pepper, and dried oregano.
- Arrange chicken on the baking sheet with chopped bell peppers and onions.
- In a bowl, whisk together olive oil, lemon juice, garlic, fresh oregano, salt, and pepper; drizzle over the chicken and veggies.
- Scatter Kalamata olives around the pan.
- Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C).
- If using feta cheese, sprinkle it over the dish during the last five minutes of baking.
