Method
 

  1. Prepare the Dressing by blending all dressing ingredients until smooth and set aside.
  2. Mash the chickpeas in a large mixing bowl until mostly mashed.
  3. Mix in cabbage, onion, cucumber, jalapeño, and a pinch of salt and pepper.
  4. Pour on the creamy dressing and toss until fully coated.
