Method
 

Grilling Instructions
  1. Wash the eggplants thoroughly and pat dry.
  2. Slice the eggplants into ½-inch thick rounds or lengthwise slices.

  4. Preheat your grill to medium-high heat (around 400°F).
  5. Grill the eggplant slices for about 4-5 minutes per side until tender and grill marks appear.
  6. Remove from heat and drizzle with balsamic vinegar; garnish with fresh herbs before serving.
