Ingredients
  

Steak and Zucchini
  • 1 pound flank steak or sirloin
  • 2 medium zucchini sliced into rounds
  • 2 tablespoons olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Sauce
  • 1 cup Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dill fresh or dried
Toppings
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/4 cup feta cheese crumbled

Method
 

Prepare the Steak and Zucchini
  1. Preheat the grill to medium-high heat.
  2. Rub the flank steak and zucchini slices with olive oil, salt, and black pepper.
Grill the Steak and Zucchini
  1. Place the steak on the grill and cook for about 5-7 minutes per side for medium-rare, or until desired doneness.
  2. Grill the zucchini for about 3-4 minutes on each side until tender and grill marks appear.
Make the Creamy Sauce
  1. In a mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, minced garlic, lemon juice, and dill. Whisk until smooth.
Assemble the Bowl
  1. Slice the grilled steak against the grain and place it in a bowl.
  2. Add grilled zucchini, cherry tomatoes, and avocado slices on top.
  3. Drizzle the creamy sauce over the top and sprinkle with feta cheese.
