Ingredients
  

  • 1 pound ground turkey Lean protein that keeps the dish hearty.
  • 1 can black beans 15 ounces, drained and rinsed.
  • 1 small onion Finely chopped.
  • 2 cloves garlic Minced.
  • 1 can diced tomatoes 14.5 ounces, drained.
  • 1 can green chilies 4 ounces.
  • 1 tablespoon olive oil For sautéing.
  • 2 teaspoons chili powder Infuses warmth and spice.
  • 1 teaspoon cumin Adds earthy notes.
  • 1 teaspoon smoked paprika Brings a subtle smokiness.
  • ½ teaspoon salt Enhances flavors.
  • ½ teaspoon black pepper Classic seasoning.
  • 8 medium flour or corn tortillas Base for wrapping.
  • 1 can enchilada sauce 10 ounces, red or green.
  • 1 ½ cups shredded cheese Cheddar, Monterey Jack, or Mexican blend.
  • to taste fresh cilantro For garnish.
  • to taste lime wedges For serving.

Method
 

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add finely chopped onion and minced garlic, sautéing until translucent and fragrant.
  2. Cook the Turkey: Add ground turkey to the skillet, breaking it apart as it cooks until no longer pink.
  3. Mix in Beans and Spices: Stir in black beans, diced tomatoes, green chilies, chili powder, cumin, smoked paprika, salt, and black pepper until well combined.
  4. Prepare Tortillas: Warm tortillas briefly in a microwave or skillet until pliable.
  5. Assemble Enchiladas: Spoon turkey mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  6. Bake with Sauce and Cheese: Pour enchilada sauce over rolled tortillas and sprinkle cheese on top. Bake at 350°F (175°C) until bubbly and golden brown, about 20 minutes.
