Ground Turkey Black Bean Enchiladas

Delicious enchiladas filled with ground turkey and black beans, topped with cheese and enchilada sauce.

Ingredients
  

Filling
  • 1 lb Ground Turkey Lean ground turkey is preferred.
  • 1 can Black Beans Drained and rinsed.
  • 1 cup Corn Frozen or canned.
  • 1 cup Onion Chopped.
  • 2 cloves Garlic Minced.
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 cup Cheddar Cheese Shredded.
Enchiladas
  • 8 large Tortillas Corn or flour.
  • 2 cups Enchilada Sauce Store-bought or homemade.

Method
 

Prepare the Filling
  1. In a skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the black beans, corn, cumin, and chili powder. Cook for another 2-3 minutes.
  4. Remove from heat and mix in half of the cheddar cheese.
Assemble the Enchiladas
  1. Preheat the oven to 375°F (190°C).
  2. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  3. Place a tortilla on a flat surface, add a portion of the turkey filling, and roll it up tightly. Place seam-side down in the baking dish.
  4. Repeat with remaining tortillas and filling.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar cheese.
Bake
  1. Cover the baking dish with foil and bake for 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  3. Let cool for a few minutes before serving.
