Prepare the Filling
- In a skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes.
- Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
- Stir in the black beans, corn, cumin, and chili powder. Cook for another 2-3 minutes.
- Remove from heat and mix in half of the cheddar cheese.
Assemble the Enchiladas
- Preheat the oven to 375°F (190°C).
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Place a tortilla on a flat surface, add a portion of the turkey filling, and roll it up tightly. Place seam-side down in the baking dish.
- Repeat with remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar cheese.
Bake
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
