Ingredients
  

Ground Turkey
  • 1 pound ground turkey lean
Rice
  • 1 cup white or brown rice uncooked
Vegetables
  • 1 cup bell pepper diced
  • 1 cup carrot shredded
  • 1 cup green onions sliced
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon lime juice freshly squeezed
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Cook the Rice
  1. Rinse the rice under cold water until the water runs clear. Cook the rice according to package instructions in a rice cooker or pot.
Prepare the Bang Bang Sauce
  1. In a mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well and set aside.
Cook the Ground Turkey
  1. In a large skillet over medium heat, add the ground turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add garlic powder, onion powder, salt, and pepper. Stir to combine and cook for an additional 3-5 minutes until fully cooked.
Add Vegetables
  1. Add the diced bell pepper and shredded carrot to the skillet. Cook for another 3-4 minutes until the vegetables are tender.
Assemble the Bowls
  1. Divide the cooked rice among four bowls. Top each bowl with the ground turkey and vegetable mixture. Drizzle with Bang Bang sauce and garnish with sliced green onions.
