Ingredients
  

  • 1 pound ground turkey Choose lean ground turkey for a healthier protein source.
  • 2 medium zucchinis Diced.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 bell pepper bell pepper Diced (any color).
  • 1 can diced tomatoes 14.5 oz, undrained.
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese Optional.
  • to taste fresh basil or parsley For garnish, optional.

Method
 

  1. Prepare your ingredients by dicing the zucchinis, chopping the onion and bell pepper, and mincing the garlic.
  2. In a large skillet over medium heat, warm the olive oil. Add the chopped onion and diced bell pepper, sauté for 3-4 minutes, then add minced garlic for an additional 1-2 minutes.
  3. Add the ground turkey to the skillet, breaking it apart as you cook for 5-7 minutes until no longer pink.
  4. Season with salt, pepper, Italian seasoning, and paprika, stirring thoroughly.
  5. Incorporate diced zucchinis and pour in the can of diced tomatoes, stirring and bringing to a gentle simmer.
  6. Cover and cook for an additional 5-7 minutes until zucchini is tender. If using mozzarella, sprinkle on top and cover until melted.
