Method
 

  1. Prepare all ingredients beforehand to enhance the dish's final taste and make for a more enjoyable cooking experience.
  2. Sauté the bacon in vegetable oil until crispy, then add onions and garlic, cooking until softened.
  3. Add the beef and brown on all sides, then stir in tomato paste, flour, and seasonings.
  4. Pour in the Guinness beef broth and beef broth, then add thyme, carrots, and potatoes.
  5. Bring to a boil, then reduce heat and simmer until the beef is tender, about 2-3 hours.
  6. Garnish with chopped parsley before serving.
