- Heat olive oil in a large pot over medium heat. Sauté the onions, bell pepper, and garlic until translucent.
- Add chicken thighs (cut into bite-sized pieces) and smoked sausage slices; cook until browned on all sides.
- Pour in chicken broth and add collard greens. Stir until greens wilt.
- Generously sprinkle Cajun seasoning over the mixture; stir well.
- Mix in diced tomatoes and bring to a gentle boil. Reduce heat; cover and simmer for 30-45 minutes.
- Just before serving, add fresh lemon juice for brightness.
