Ingredients
  

  • 1 lb boneless chicken thighs
  • 8 oz smoked sausage
  • 4 cups fresh collard greens, chopped
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté the onions, bell pepper, and garlic until translucent.
  2. Add chicken thighs (cut into bite-sized pieces) and smoked sausage slices; cook until browned on all sides.
  3. Pour in chicken broth and add collard greens. Stir until greens wilt.
  4. Generously sprinkle Cajun seasoning over the mixture; stir well.
  5. Mix in diced tomatoes and bring to a gentle boil. Reduce heat; cover and simmer for 30-45 minutes.
  6. Just before serving, add fresh lemon juice for brightness.
