Halloween Slime Cupcakes

Spooky treat with vibrant black and green colors, filled with lime marmalade and topped with green vanilla buttercream.

Ingredients
  

  • 175 g Baking spread (or butter) Softened, unsalted
  • 175 g Caster sugar For sweetness and texture
  • 3 large Eggs Essential for structure and moisture
  • 2 tsp Vanilla extract Adds delightful flavor
  • 175 g Self raising flour Provides lift for the cupcakes
  • 25 g Black food colouring For that spooky look
  • 200 g Butter Softened, unsalted, for the buttercream
  • 400 g Icing sugar Sweetness and smoothness in the frosting
  • 1 tsp Vanilla extract Enhances the buttercream flavor
  • 1-2 tbsp Milk To achieve desired consistency in frosting
  • Green food colouring For vibrant buttercream color
  • Yellow food colouring To create a unique shade in frosting
  • 150 g Tinned custard To fill the cupcakes with gooey goodness
  • Candy eyes Fun decoration for spookiness
  • Green sprinkles For extra festive flair

Method
 

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and prepare your cupcake tin with black cupcake cases.
  2. In a large mixing bowl, combine the softened baking spread and caster sugar using an electric mixer on medium speed for about 5 minutes until smooth and fluffy.
  3. Crack in the large eggs one by one while adding in the vanilla extract; whisk until fully incorporated.
  4. Gently fold in self-raising flour until just combined, taking care not to overmix.
  5. Add the black food coloring into your batter, mixing well until uniform dark color is achieved.
  6. Bake the cupcakes for approximately 25-30 minutes or until a skewer inserted comes out clean; let them cool completely on a wire rack.
