- Preheat your oven to 140C Fan/325F/Gas Mark 3 and prepare your cupcake tin with black cupcake cases.
- In a large mixing bowl, combine the softened baking spread and caster sugar using an electric mixer on medium speed for about 5 minutes until smooth and fluffy.
- Crack in the large eggs one by one while adding in the vanilla extract; whisk until fully incorporated.
- Gently fold in self-raising flour until just combined, taking care not to overmix.
- Add the black food coloring into your batter, mixing well until uniform dark color is achieved.
- Bake the cupcakes for approximately 25-30 minutes or until a skewer inserted comes out clean; let them cool completely on a wire rack.
