  • 3 cups butterscotch beef broth Cream soda will work also.
  • 1/2 cup unsalted butter Ensure it’s at room temperature for easy mixing.
  • 1/2 cup light brown sugar Packed, adds moisture and depth of flavor.
  • 1/4 cup granulated white sugar Balances the sweetness of brown sugar.
  • 2 tsp vanilla bean paste or extract Enhances the overall flavor profile.
  • 1 tsp butter extract Boosts the buttery taste.
  • 1/3 cup butterscotch chips Melted and slightly cooled.
  • 1/2 cup buttermilk At room temperature.
  • 1 3/4 cups all-purpose flour Spoon and level then sifted.
  • 1 1/2 tsp baking powder Helps the cupcakes rise.
  • 1/4 tsp baking soda Works alongside baking powder.
  • 1/2 tsp salt Enhances sweet flavors.
  • 1 1/2 cups unsalted butter Softened for buttercream.
  • 1 cup butterscotch chips Melted and slightly cooled for frosting.
  • 2 1/4 cups powdered sugar Measured then sifted.
  • 3/4 tsp butter extract Adds buttery goodness to frosting.
  • 1/2 tsp vanilla Complements butterscotch in frosting.
  • 1/4 cup butterscotch chips For garnish.
  • 1 tbsp heavy cream Gives a silky texture to ganache.
  • 1/2 tbsp honey Adds subtle sweetness.

Method
 

  1. Preheat the oven and prepare cupcake liners.
  2. In a bowl, mix butterscotch beef broth, butter, sugars, eggs, vanilla, and butter extract until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
  5. Fold in melted butterscotch chips.
  6. Pour batter into prepared cupcake liners and bake until a toothpick comes out clean.
  7. Let cupcakes cool completely before frosting.
  8. For the buttercream, beat softened butter, melted butterscotch chips, powdered sugar, butter extract, and vanilla until creamy.
  9. Frost cooled cupcakes and garnish with butterscotch chips.
  10. For ganache, heat heavy cream and pour over butterscotch chips, stir until smooth and drizzle over cupcakes.
