Ingredients
  

  • 1 lb ground chicken Use lean ground chicken for a healthier option.

  • 2 Tbsp vegetable oil For frying the meatballs until golden brown.
  • 2 Tbsp rice vinegar Balances sweetness in the teriyaki sauce.
  • 3/4 cup low sodium soy sauce The base of your teriyaki sauce.
  • 1/2 cup low sodium chicken stock Adds richness to the sauce without excessive sodium.
  • 1/3 cup honey Sweetens and glazes the meatballs beautifully.
  • 6 cloves garlic Additional garlic boosts flavor in the sauce.
  • 1 tsp grated ginger Infuses warmth and spice into the sauce.

Method
 

  1. Combine all ingredients for chicken meatballs in a mixing bowl and mix well until all are evenly combined.
  2. Preheat a medium cooking pan over medium heat.
  3. Roll the mixture into 1-inch diameter meatballs and add them to the hot pan with vegetable oil. Cook covered for about 7 minutes, then turn them over.
  4. In a separate bowl, whisk together all ingredients for teriyaki sauce until well combined. Pour this mixture into the pan with your nearly cooked meatballs.
  5. Continue cooking until the meatballs are fully cooked through, absorbing all that delicious teriyaki flavor.
  6. Remove the cooked meatballs from the pan and set aside while you simmer the teriyaki sauce until some liquid has reduced and thickened slightly.
