  • 1/2 cup low sodium chicken stock Keeps the sauce rich while controlling sodium levels.

  • 6 cloves garlic Adds depth to the teriyaki sauce; more garlic means more flavor!
  • 1 tsp grated ginger Introduces a zesty note that complements honey beautifully.

Method

  1. Combine all ingredients for chicken meatballs in a mixing bowl and mix well until all are evenly combined.
  2. Preheat a medium cooking pan over medium heat, ensuring it's hot enough to sear the meatballs nicely.
  3. Roll meatballs about 1-inch in diameter; add vegetable oil to the pan and place meatballs inside, cooking covered for about 7 minutes before turning them over.
  4. In a separate bowl, whisk together all ingredients for teriyaki sauce and then pour it into the pan with almost cooked meatballs.
  5. Continue cooking until meatballs are fully cooked through; remove them from the pan and set aside.
  6. Simmer teriyaki sauce in the pan until some liquid is reduced before mixing back in the chicken meatballs, allowing them to soak up all those incredible flavors.
