Ingredients
  

Bacon and Potatoes
  • 6 slices bacon thick cut
  • 2 cups diced potatoes peeled and cubed
  • 1 cup onion chopped
  • 1 cup cheddar cheese shredded
Egg Mixture
  • 8 large eggs beaten
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives chopped

Method
 

Cook Bacon and Potatoes
  1. In a large skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.
  2. In the same skillet, add the diced potatoes and chopped onion. Cook until the potatoes are tender and golden, about 10-12 minutes.
Prepare Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and chives.
Combine and Cook Frittata
  1. Preheat the oven to 350°F (175°C).
  2. Add the cooked bacon back into the skillet with the potatoes, then pour the egg mixture over the top. Sprinkle with cheddar cheese.
  3. Cook on the stovetop for about 5 minutes until the edges start to set, then transfer to the oven.
  4. Bake for 20-25 minutes until the frittata is puffed and set in the center.
Serve
  1. Let the frittata cool for a few minutes before slicing. Serve warm or at room temperature.
