- Pat the chicken breasts dry with paper towels.
- Set the Instant Pot to sauté mode and heat olive oil. Add chopped onions and minced garlic; sauté until fragrant (about 30 seconds).
- Season the chicken with paprika and cumin; place in the pot and sear each side for about 2-3 minutes until golden brown.
- Pour in the chicken broth, soy sauce, honey, and lemon juice. Stir gently to combine.
- Seal the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
- Perform a quick release once cooking is complete. Shred or serve whole with juices drizzled over top.
