Chicken and Marinade
  • 4 pieces boneless, skinless chicken breasts
  • 3 tbsp extra virgin olive oil for marinade
  • 1 tsp garlic powder for marinade
  • Salt to taste
  • Pepper to taste
Toppings
  • 8 oz fresh mozzarella cheese sliced
  • 2 pieces ripe tomatoes sliced
  • 1 cup fresh basil leaves
  • 3 tbsp balsamic glaze for drizzling

Method
 

Preparation
  1. Prepare the marinade by mixing olive oil, garlic powder, salt, and pepper in a bowl.
  2. Marinate the chicken in a resealable bag or shallow dish for at least 30 minutes, up to 2 hours.
  3. Preheat the grill to medium-high heat.
Grilling
  1. Grill the chicken for about 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
  2. Add mozzarella slices during the last few minutes of grilling until melted.
  3. Remove from the grill, let rest briefly, then top with tomato slices, basil leaves, and drizzle with balsamic glaze before serving.
