  • 8 oz cheese tortellini
  • 2 cups fresh broccoli florets
  • 1 lemon zest from 1 lemon
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Boil salted water in a large pot.
  2. Add the cheese tortellini and cook according to package instructions until al dente (about 3-5 minutes).
  3. In the last minute of cooking, add the fresh broccoli florets.
  4. Meanwhile, heat heavy cream, lemon zest, and lemon juice in a separate pan over medium heat until warmed through.
  5. Drain the tortellini and broccoli, then combine them in the pan with the sauce, tossing until well-coated.
  6. Stir in freshly grated Parmesan cheese along with salt and pepper to taste.
  7. Serve immediately while hot.
