Vegetables
  • 2 tbsp olive oil
  • 3 cloves fresh garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
Pasta and Flavorings
  • 1 cup orzo pasta
  • 2 pieces fresh lemons juice and zest
  • 1 tsp fresh thyme or ½ tsp dried thyme
  • Salt and pepper to taste

Cooking Steps
  1. Heat olive oil in a large pot over medium heat. Add diced chicken breasts and cook until golden brown on all sides, about 6-8 minutes. Remove chicken and set aside.
  2. In the same pot, add minced garlic, carrots, and celery; sauté until softened (about 3-4 minutes).
  3. Pour in the chicken broth along with thyme sprigs; bring to a boil.
  4. Add the orzo pasta and return to a simmer for about 10 minutes until al dente.
  5. Squeeze in lemon juice and add spinach or kale; stir until greens are wilted.
  6. Adjust seasoning with salt and pepper before serving hot.
