Method
Prepare the Marinade
- In a small bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper.
Marinate the Tilapia
- Place the tilapia fillets in a shallow dish and pour the marinade over them. Let them marinate for 10 minutes.
Cook the Green Beans
- Bring a pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender-crisp. Drain and set aside.
Cook the Tilapia
- Heat a skillet over medium heat. Add the marinated tilapia fillets and cook for 3-4 minutes on each side until cooked through and flaky.
Sauté the Green Beans
- In the same skillet, add butter and sauté the cooked green beans for 2-3 minutes until heated through. Season with salt to taste.
Serve
- Plate the tilapia fillets alongside the sautéed green beans. Serve immediately.
