Marinated Za'atar Bean Salad

A delightful explosion of flavors and textures combining earthy za'atar with fresh vegetables.

Ingredients
  

  • 1/2 medium red onion Thinly sliced for sweetness.
  • 1 tsp kosher salt Plus more as needed.
  • 1 lemon zest Adds a bright citrus flavor.
  • 3 tbsp lemon juice Freshly squeezed for tanginess.
  • 1 can chickpeas Drained and rinsed.
  • 1 can butter beans Drained and rinsed.
  • 1 cup green olives Roughly chopped.
  • 7-8 jarred artichoke hearts Quartered (optional).
  • 1/2 cup mint leaves Finely minced.
  • 1/2 cup parsley Finely minced.
  • 3 tbsp extra virgin olive oil For richness and depth.
  • 3 cloves garlic Smashed and roughly chopped.
  • 3 tsp za’atar A Middle Eastern spice blend.
  • 1 tsp sumac Adds a tangy kick.
  • 1/2 tsp ground cumin For earthiness.

Method
 

  1. Thinly slice the onion and add to a large bowl, toss together with the kosher salt, lemon juice, and lemon zest. Set aside.
  2. Drain and rinse the beans, roughly chop the olives, finely mince the herbs, and add everything to the bowl of onions.
  3. In a pan, add the olive oil and garlic, and sauté on medium heat until the garlic just begins to brown. Remove from heat and sprinkle in the za’atar, sumac, and cumin.
  4. Pour the marinade over the salad and toss together. Adjust for salt as needed.
  5. Let the salad marinate for about 2 hours before serving, or enjoy it fresh.
