  • 1 large sweet onion diced
  • 2 medium carrots sliced thinly
  • 2 stalks celery chopped
  • 6 cups low-sodium chicken broth
  • 2 tsp fresh thyme chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp lemon juice
  • Salt to taste
  • Pepper to taste

Method

  5. Lower heat and add chicken breasts; simmer for about 20 minutes or until cooked through.
  6. Remove chicken to shred it; return to the pot with lemon juice and adjust seasoning before serving.
