Method
 

  1. Begin by heating 1 tablespoon of olive oil in a skillet over medium heat. Add diced onions and sauté until they become translucent, about five minutes. Stir in minced garlic and cook for an additional 30 seconds until fragrant before removing from heat.
  2. In a large mixing bowl, combine the sautéed onion and garlic mixture with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, fresh dill, lemon juice, dried oregano, paprika, ground cumin, salt, and black pepper. Mix everything together thoroughly until well incorporated.
  3. With your hands or a scoop, shape the mixture into approximately eight equal-sized patties that are about half an inch thick. Ensure they are compact so they hold together during cooking.
  4. Heat the remaining olive oil in your skillet over medium heat again. Carefully place each patty in the skillet without overcrowding them and cook for about five to six minutes on each side until they develop a golden brown crust and are cooked through.
  5. Once cooked thoroughly, transfer the patties onto paper towels to drain excess oil before serving warm. Garnish as desired with your favorite toppings or sauces.
