  1. Sauté Onions and Garlic: Start by heating 1 tablespoon of olive oil in a skillet over medium heat. Remove from heat and let cool slightly before adding to the mixture.
  2. Combine Ingredients: In a large mixing bowl, combine the sautéed onions and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Use your hands or a spatula to mix everything together until well incorporated but be careful not to overmix as this can make the patties tough.
  3. Shape Patties: With your hands lightly greased with olive oil (to prevent sticking), divide the mixture into equal portions and shape them into patties about ½ inch thick. You should yield approximately eight patties from this mixture depending on how large you make them.
  4. Cook Patties: Heat another 2 tablespoons of olive oil in your skillet over medium heat until shimmering but not smoking. Place each patty carefully in the skillet without overcrowding them; if necessary, cook in batches. Fry each side for about 5-6 minutes until they turn golden brown and are cooked through.
