Ingredients
  

Protein
  • 1 pound ground beef preferably lean
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup cherry tomatoes halved
  • 1 medium onion sliced
  • 2 cloves garlic minced
Seasoning
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon lemon juice freshly squeezed

Method
 

Prepare the Ingredients
  1. Slice the bell pepper, zucchini, and onion. Halve the cherry tomatoes and mince the garlic.
Cook the Beef
  1. In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
Add Vegetables
  1. Add the sliced onion and garlic to the skillet, cooking for 2-3 minutes until the onion is translucent.
  2. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.
Season and Serve
  1. Sprinkle the oregano, salt, and black pepper over the stir-fry. Drizzle with lemon juice and stir well to combine. Cook for another minute.
  2. Serve hot, garnished with fresh herbs if desired.
