Ingredients
  

Steak and Grains
  • 1 lb sirloin steak trimmed and cut into strips
  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 cup red bell pepper diced
  • 1 cup kalamata olives pitted and sliced
  • 1 cup feta cheese crumbled
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cook Quinoa
  1. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
Grill Steak
  1. Preheat the grill to medium-high heat. Season the steak strips with salt and pepper.
  2. Grill the steak for about 3-4 minutes on each side until cooked to your desired doneness.
  3. Remove from grill and let rest for a few minutes before slicing.
Prepare Vegetables and Dressing
  1. In a mixing bowl, combine cherry tomatoes, cucumber, red bell pepper, kalamata olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
Assemble Bowl
  1. In each serving bowl, layer quinoa, grilled steak, and the vegetable mixture.
  2. Drizzle the dressing over the top and serve immediately.
