  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.

  4. Combine wet and dry ingredients gently; avoid overmixing.
  5. Fold in chocolate chips if desired.
  6. Fill each muffin cup two-thirds full with batter and bake for 15-18 minutes until a toothpick comes out clean.
