  • 0.75 cups unsweetened cocoa powder
  • 1 cups granulated sugar
  • 0.5 cups brown sugar
  • 3 large eggs
  • 0.5 cups vegetable oil
  • 2 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cups semi-sweet or dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Grate zucchini using the coarse side of a box grater; squeeze out excess moisture using a clean towel.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, mix granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Stir in grated zucchini.
  5. Gently fold dry ingredients into the wet mixture until just combined. If desired, add chocolate chips.
  6. Pour batter into prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out clean.
  7. Allow to cool before slicing and serving.
