- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Grate zucchini using the coarse side of a box grater; squeeze out excess moisture using a clean towel.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, mix granulated sugar, brown sugar, oil, eggs, and vanilla until smooth. Stir in grated zucchini.
- Gently fold dry ingredients into the wet mixture until just combined. If desired, add chocolate chips.
- Pour batter into prepared pan and smooth the top. Bake for 30–35 minutes or until a toothpick comes out clean.
- Allow to cool before slicing and serving.
