Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
  3. Gently fold in the grated carrots, grated apple, walnuts, and dried cranberries or raisins.
  4. In another bowl, mix the eggs, oil or applesauce, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  6. Spoon the batter into muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
