Prepare the Chicken
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat.
- Add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through and golden brown.
- Remove the chicken from the skillet and set aside.
Make the Mushroom Sauce
- In the same skillet, add the sliced mushrooms and cook until they are browned, about 5 minutes.
- Add minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.
- Pour in the heavy cream and bring to a simmer, stirring frequently.
- Stir in the grated Asiago cheese until melted and smooth.
Combine and Serve
- Return the cooked chicken to the skillet, spooning the mushroom sauce over the top.
- Simmer for an additional 5 minutes to heat through.
- Serve hot, garnished with additional Asiago cheese if desired.
