Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Mushroom Sauce
  • 8 ounces cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup Asiago cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts and cook for about 6-7 minutes per side, or until cooked through and golden brown.
  4. Remove the chicken from the skillet and set aside.
Make the Mushroom Sauce
  1. In the same skillet, add the sliced mushrooms and cook until they are browned, about 5 minutes.
  2. Add minced garlic and dried thyme, cooking for an additional 1-2 minutes until fragrant.
  3. Pour in the heavy cream and bring to a simmer, stirring frequently.
  4. Stir in the grated Asiago cheese until melted and smooth.
Combine and Serve
  1. Return the cooked chicken to the skillet, spooning the mushroom sauce over the top.
  2. Simmer for an additional 5 minutes to heat through.
  3. Serve hot, garnished with additional Asiago cheese if desired.
