  • 4 fillets cod about 6 oz each
  • 2 tbsp blackening seasoning
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • chopped fresh parsley for garnish

Method
 

  1. Rinse cod fillets under cold water and pat dry with paper towels.
  2. In a bowl, combine blackening seasoning.
  3. Heat olive oil and butter in a cast-iron skillet over medium-high heat until shimmering.
  4. Generously rub both sides of the cod fillets with the spice mix.
  5. Sear fillets in the hot skillet for about 3-4 minutes per side until a blackened crust forms.
  6. Drizzle with lemon juice and garnish with parsley before serving.
