Ingredients
  

Cake Base
  • 1 cup almond flour
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter softened
Ganache and Syrup
  • 1/2 cup heavy cream
  • 1/4 cup coffee liqueur or strong brewed coffee
  • 4 oz dark chocolate 70% cacao

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease and line a baking pan with parchment paper.
  2. In a bowl, combine almond flour and cocoa powder.
  3. Beat egg whites until soft peaks form; gradually add sugar until stiff peaks develop.
  4. Gently fold whipped egg whites into the almond mixture.
  5. Pour batter into the prepared pan and bake for 15-20 minutes. Allow layers to cool completely.
Ganache and Buttercream
  1. For ganache, heat heavy cream until simmering; pour over chopped dark chocolate and stir until smooth.
  2. For buttercream, beat softened butter with powdered sugar and mix in coffee liqueur.
Assembly
  1. Slice cooled sponge into three layers, soak with coffee syrup, and layer with buttercream and ganache.
