  • ½ tsp freshly cracked black pepper
  • 1 tsp rosemary or thyme (optional)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets thoroughly and trim off the tops and tails; do not peel.

  4. Arrange the seasoned beets on a parchment-lined baking sheet in a single layer.
  5. Roast for 45-60 minutes, checking for doneness by piercing with a fork.
  6. Allow the roasted beets to cool slightly before serving or slicing.
