Ingredients
  

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup creamy peanut butter
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp ground cumin optional

Method
 

  1. Drain and rinse the canned chickpeas under cold water until clean.
  2. In a food processor, combine the chickpeas, peanut butter, lemon juice, garlic, olive oil, salt, and cumin.
  3. Blend until silky smooth, scraping down the sides as needed.
  4. If too thick, add water one tablespoon at a time until desired texture is reached.
  5. Adjust seasoning with more salt or lemon juice if necessary.
  6. Transfer hummus to a bowl, drizzle with olive oil, and sprinkle paprika if desired.
