Method
Prepare the Chicken
- Preheat the grill to medium-high heat. Season the chicken with salt and pepper, then grill for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest.
- Once cooled, shred or dice the chicken into bite-sized pieces.
Assemble the Flatbreads
- Preheat the oven to 400°F (200°C).
- On a baking sheet, place the flatbreads. Spread a layer of pesto sauce evenly on each flatbread.
- Top with the grilled chicken, mozzarella cheese, and halved cherry tomatoes.
Bake and Serve
- Drizzle olive oil over the flatbreads, then bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, sprinkle with fresh basil, slice, and serve warm.
