Ingredients
  

Chicken and Flatbread
  • 2 cups cooked chicken breast shredded or diced
  • 4 pieces flatbread store-bought or homemade
  • 1 cup mozzarella cheese shredded
  • 1/2 cup pesto sauce store-bought or homemade
Toppings
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil chopped
  • 1 tablespoon olive oil for drizzling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken with salt and pepper, then grill for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest.
  2. Once cooled, shred or dice the chicken into bite-sized pieces.
Assemble the Flatbreads
  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, place the flatbreads. Spread a layer of pesto sauce evenly on each flatbread.
  3. Top with the grilled chicken, mozzarella cheese, and halved cherry tomatoes.
Bake and Serve
  1. Drizzle olive oil over the flatbreads, then bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven, sprinkle with fresh basil, slice, and serve warm.
