Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour and granulated sugar until well combined.
  3. Gently fold in the egg whites and vanilla extract until the mixture is sticky but cohesive.
  4. Stir in the pine nuts, reserving some for topping.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and press reserved pine nuts on top.
  6. Bake for 15-18 minutes or until edges are golden brown; cool on wire racks before serving.
