Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or apple cider vinegar
  • 1 tbsp cornstarch for thickening
Vegetables and Rice
  • 1 cup long-grain white rice or brown rice
  • 1 cup pineapple chunks fresh or canned
  • 1 cup bell pepper diced, any color
  • 1 cup snap peas or green beans
  • 2 tbsp vegetable oil for cooking
Garnish
  • 2 tbsp green onions sliced
  • 1 tbsp sesame seeds optional

Method
 

Marinate Chicken
  1. In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
  2. While the chicken is marinating, cook the rice according to package instructions.
Cook Chicken and Vegetables
  1. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add bell pepper and snap peas to the skillet, cooking for an additional 3-4 minutes until vegetables are tender.
  3. Stir in pineapple chunks and cook for another 2 minutes until heated through.
Combine and Serve
  1. Serve the chicken and vegetable mixture over the cooked rice. Garnish with green onions and sesame seeds if desired.
