Marinate Chicken
- In a bowl, combine soy sauce, honey, rice vinegar, and cornstarch. Add chicken pieces and marinate for at least 15 minutes.
- While the chicken is marinating, cook the rice according to package instructions.
Cook Chicken and Vegetables
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-7 minutes.
- Add bell pepper and snap peas to the skillet, cooking for an additional 3-4 minutes until vegetables are tender.
- Stir in pineapple chunks and cook for another 2 minutes until heated through.
Combine and Serve
- Serve the chicken and vegetable mixture over the cooked rice. Garnish with green onions and sesame seeds if desired.
