- Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
- In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and lime juice until combined.
- Add diced pineapple to the marinade and let it soak while you prepare the chicken.
- Place chicken thighs in a resealable bag or shallow dish. Pour half of the marinade over them and massage it in. Marinate for at least 30 minutes.
- Arrange marinated chicken thighs on a parchment-lined baking sheet skin-side up and bake for 25-30 minutes until golden brown and cooked through.
- Drizzle sesame oil over the top and garnish with sliced green onions before serving.
