Ingredients
  

  • 4 thighs bone-in chicken thighs skin-on
  • 1 cup fresh pineapple diced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp sesame oil
  • 2 tbsp lime juice

Method
 

  1. Preheat the oven to 400°F (200°C). Pat the chicken thighs dry with paper towels.
  2. In a bowl, whisk together soy sauce, brown sugar, garlic, ginger, and lime juice until combined.
  3. Add diced pineapple to the marinade and let it soak while you prepare the chicken.
  4. Place chicken thighs in a resealable bag or shallow dish. Pour half of the marinade over them and massage it in. Marinate for at least 30 minutes.
  5. Arrange marinated chicken thighs on a parchment-lined baking sheet skin-side up and bake for 25-30 minutes until golden brown and cooked through.
  6. Drizzle sesame oil over the top and garnish with sliced green onions before serving.
