Canned Pineapple
  • 1 can (20 oz) canned pineapple slices in juice drained
Butter & Sugars
  • ½ cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
Eggs & Extracts
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
Dry Ingredients
  • cups all-purpose flour sifted
  • 1 tsp baking powder
  • ½ cup whole milk
  • pinch of salt

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt butter in a saucepan over low heat; stir in brown sugar until smooth. Pour into the prepared pan.
  3. Arrange drained pineapple slices over the brown sugar mixture.
Cake Batter
  1. In a large bowl, cream together softened butter and granulated sugar until fluffy.
  2. Beat in eggs one at a time and add vanilla extract.
  3. Mix flour, baking powder, and salt in another bowl; gradually add to the creamed mixture along with milk until combined.
Baking
  1. Pour batter over pineapples and bake for about 45 minutes until golden and a toothpick comes out clean.
  2. Cool for 10 minutes before flipping onto a serving plate; let cool completely before slicing.
