Potato and Sausage Chowder

Ingredients
  

  • 1 tbsp olive oil A healthy fat to start the cooking process.
  • 400 g sausages Your choice of sausage adds depth of flavor.
  • 1 onion Chopped for sweetness and aromatic base.
  • 2 stalks celery Sliced, adds crunch and flavor balance.
  • 2 carrots Sliced, enhances sweetness and color in the chowder.
  • 2 cloves garlic A must-have for adding depth of flavor.
  • 1/2 tsp dried thyme Offers an earthy, herbal note.
  • 3 tbsp plain/all-purpose flour Helps thicken the chowder beautifully.
  • 1 litre chicken or vegetable stock Provides the soup base's rich flavor.
  • 2 bay leaves Infuses aromatic flavor during cooking.
  • 100 g wild rice Adds texture and nutrition to the chowder.
  • 3 potatoes Medium, peeled and cut into chunks, the star ingredient.
  • 375 ml single/light cream or half and half Creates that luscious creamy finish.
  • salt To taste, essential for enhancing all the flavors.

Method
 

  1. Heat olive oil in a pot and cook the sausages until browned. Remove and slice them.
  2. In the same pot, add onion, celery, carrots, and garlic. Sauté until softened.
  3. Stir in dried thyme and flour, cooking for a minute.
  4. Gradually add the stock while stirring, then add bay leaves, wild rice, and potatoes.
  5. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  6. Stir in cream and sliced sausages, heat through, and season with salt.
