Ingredients
  

Cheese Mixture
  • 8 oz Cream Cheese softened
  • 1 cup Shredded Cheddar Cheese divided
  • 1 cup Shredded Monterey Jack Cheese divided
Vegetables
  • 1 cup Fresh Spinach chopped
  • 1 clove Garlic minced
  • 1 small Onion finely chopped
Seasonings
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Cumin
Other
  • 1 cup Sour Cream
  • 1 cup Salsa optional for serving

Method
 

Prepare the Vegetables
  1. In a saucepan over medium heat, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
  2. Add the chopped spinach and cook until wilted, about 2 minutes.
Mix the Cheese
  1. In a mixing bowl, combine the softened cream cheese, half of the cheddar cheese, and half of the Monterey Jack cheese.
  2. Stir in the sautéed vegetables and seasonings until well combined.
Bake the Dip
  1. Transfer the mixture to an oven-safe dish and top with the remaining cheeses.
  2. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until bubbly and golden.
Serve
  1. Serve warm with tortilla chips or fresh vegetables, and top with salsa if desired.

Notes
