Method
Prepare the Vegetables
- In a saucepan over medium heat, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes.
- Add the chopped spinach and cook until wilted, about 2 minutes.
Mix the Cheese
- In a mixing bowl, combine the softened cream cheese, half of the cheddar cheese, and half of the Monterey Jack cheese.
- Stir in the sautéed vegetables and seasonings until well combined.
Bake the Dip
- Transfer the mixture to an oven-safe dish and top with the remaining cheeses.
- Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until bubbly and golden.
Serve
- Serve warm with tortilla chips or fresh vegetables, and top with salsa if desired.
