Ingredients
  

Salad Base
  • 2 cups mixed greens such as spinach and arugula
  • 1 cup cherry tomatoes halved
  • 1 cucumber cucumber diced
  • 1/4 cup red onion finely chopped
Tuna Mixture
  • 2 cans tuna in water, drained
  • 1 lemon lemon juice freshly squeezed
  • 2 tablespoons olive oil extra virgin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Toppings
  • 1/4 cup feta cheese crumbled
  • 1/4 cup black olives sliced

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  2. Toss the salad ingredients together until well mixed.
Make the Tuna Mixture
  1. In a separate bowl, combine the drained tuna, lemon juice, olive oil, oregano, salt, and black pepper.
  2. Mix well until all ingredients are combined.
Combine and Serve
  1. Add the tuna mixture to the salad bowl and gently toss to combine.
  2. Top with crumbled feta cheese and sliced black olives before serving.
