Ingredients
  

Brownie Batter
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
Raspberry Topping
  • 1 cup fresh raspberries washed and dried
  • 2 tablespoons granulated sugar for sprinkling

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Brownie Batter
  1. In a mixing bowl, whisk together the melted butter and sugar until well combined.
  2. Add the eggs and vanilla extract, whisking until smooth.
  3. Sift in the cocoa powder, flour, salt, and baking powder. Stir until just combined.
Add Raspberries
  1. Gently fold in the fresh raspberries into the brownie batter.
Bake the Brownies
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Sprinkle the additional sugar over the top of the batter.
  3. Bake in the preheated oven for 25 minutes or until a toothpick inserted comes out with a few moist crumbs.
Cool and Serve
  1. Remove from the oven and let cool in the pan for about 10 minutes. Use the parchment overhang to lift the brownies out of the pan and cool completely on a wire rack.
  2. Cut into squares and serve.

Notes
