- Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
- Add salsa verde and black beans; simmer for 3 minutes.
- Stir in softened cream cheese until melted and smooth.
- In an oven-safe dish, place seasoned chicken; pour vegetable mixture over it and sprinkle cheese on top. Cover with foil.
- Bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
