  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cream cheese softened
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup bell peppers diced
  • 1 medium onion diced
  • 1/4 cup fresh cilantro chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
  3. Add salsa verde and black beans; simmer for 3 minutes.
  4. Stir in softened cream cheese until melted and smooth.
  5. In an oven-safe dish, place seasoned chicken; pour vegetable mixture over it and sprinkle cheese on top. Cover with foil.
  6. Bake for 25 minutes; remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
